The Certificate in Sensory Appreciation is an immersive, workshop-based course designed to deepen your ability to evaluate, describe, and enjoy whiskey through all the senses. Over two dynamic days (5 hours per day), you’ll explore the origins of flavor, train your palate, and discover how whiskey can evoke moods, seasons, and memories.

Guided by industry expert, Devin Ershow, and enriched by the perspective of the American Single Malt Whiskey Commission, you will:

  • Learn how to conduct structured tastings and describe whiskey with clarity and confidence.
  • Explore whiskey through the lens of seasonality, mood, and food pairing to enhance appreciation and service.
  • Participate in blind tastings to apply your skills in identifying style, flavor, and pairing potential.

Devin Ershow is Head Mixologist at Stranahan’s Colorado Whiskey and Co-Founder of American Mash & Grain. With experience in distilling, blending, and hospitality at leading U.S. distilleries, he brings a wealth of practical knowledge to the classroom. He holds multiple industry certifications, including Executive Bourbon Steward, WSET Level 2 in Spirits (Distinction), Certified Bourbon & Scotch Professional, and the Diploma in Scotch Whisky from the Edinburgh Whisky Academy.
